If you’re never getting less than 5 sec in your car, then either you’re doing something wrong or there’s something wrong with your car.
There’s a video that has been widely circulated here of a manual V6 doing 0-60mph in 4.1, so 0-100kmh would be no more than 4.2 or 4.3.

If I had to guess I would say that in testing Lotus found that changing up at that point actually gives the best performance.
That said, it is a little strange if there is no way you can go beyond 6500. Is there a manual mode and you change gear using paddles or the lever? If so does it still...
Just out of curiosity, are you saying it bounces off the limiter at 6500?
Or is there nothing you can do to stop it changing at 6500, even though the limit is 6800?
Given there are several purchase options in terms of the 3rd cat delete, is there a particular one that is having this issue with having to expand the pipe, and are there others that fit straight away?

I think some people conflate the regulations and restrictions in their own part of the world with the entire world.
There’s a big old world out there, and what may restrict things in your corner of it means nothing for the rest of it.
I’d be willing to bet there will be an upgraded V6, even if it’s a limited production “final edition”.
Expect a corresponding huge price tag, but if it’s truly limited that will be the one to have down the track.

I had them fix all the sticky bits on my old 355 and they were more than happy to ship to Australia.
I can’t see a hotter version having 475hp.

You only have to look at the table posted in another thread to see that the difference between PDK and manual on otherwise pretty much the same car is 0.5 seconds.

The issue is the manual gear-change.
That alone adds half a second to any 0-60 time.
If the V6 had a decent DCT it would almost certainly do sub 4 out of the box, and perhaps with some weight loss and modest power increase maybe down...
I agree with you 100% and when my car is out of warranty will almost certainly do most of what you have done and propose to do.

We are currently 2000km in to what will be a 4000km round trip over two weeks.
Car has been perfect. Not a single thing has gone wrong and it’s been a blast.
My advice to anyone re a long trip is to just do it.
